KARIN'S FEINBROT - GERMAN EVERYDAY BREAD

When I moved to Maine in 2001 - to get even with the guy who had sold me a houseful of furniture, but refused to give me a discount - I knew I would be in big trouble. And I was right!

After two days my stomach started complaining, and my brain kept sending "gag" signals, when I walked the supermarket aisles and encountered nothing but shelf after shelf of "Wonderbreads".

Poking one of those proudly-called rye, multigrain, oat nut, or wheat breads with my finger, I found no resistance. I could squeeze them through their plastic bags, and they would spring right back to their original size when I let go. Even toasted, they retained their squishyness and would not support butter or jam without getting soft and soggy.

Eating two warm meals a day was another thing my stomach refused to accept. German families usually have bread and cold cuts either for lunch or for dinner. German schools don't offer lunch, and Mother cooks at home.

As a working mom I used to view this daily cooking as a chore, and bad idea - until my daughter went to Bangor High, and had to eat at the school cafeteria (this experience turned her into a cook, and gave birth to a career as chef!).

Finally, I couldn't take my stomach's growling anymore. I started seeing bread mirages by day, and dreamed of crusty loaves by night. So I went on a quest for German everyday bread, Feinbrot.

The first step was, of course, to find a recipe. That was, in 2001, a big hurdle. No one in Germany baked Feinbrot at home, you could get several varieties in every bakery and supermarket.

My baking books and the internet offered only recipes for specialty breads, but not for the simple loaf I was looking for.

Feinbrot is usually baked with medium rye flour, but I was lucky to find whole rye, if any.

And how to make sourdough? I didn't have the slightest idea! But then I found a recipe for Pain au Levain, made with sourdough, in the "French Farmhouse Cookbook".

Full of enthusiasm I mixed my first starter from the scratch, and, also, as backup and for comparison, another starter from a store bought package.

My first two breads, twin loaves from the two different starters, resulted in two almost identical bricks!

Stubbornly, I kept on baking, producing more bricks on the way - my husband suggested having a supply next to our bed in case of a home invasion - and experimented with different amounts of rye, wheat, temperatures and baking times.

After several weeks (and bricks!) my homemade starter was way ahead of the store bought mix, both in flavor and activity. Slowly, by trial and error, I figured out what bread flour/rye ratio worked best, and which temperatures and baking times delivered the best results.

An open house tour with my daughter at the New England Culinary Institute in Burlington, Vermont, left me green with envy. Valerie was going to learn how to make baguettes - from a real French pastry chef! I went home, and, since I couldn't be one, at least I could buy "The Bread Baker's Apprentice".

Reading Peter Reinhart's instructions I was struck by an epiphany! I had always (as stated in my recipes) just placed a cup with cold water in the oven. Though my bread had the right taste and the right crumb, the crust was rather chewy and thick. But now I learned how to set up my oven for hearth baking - with baking stone and STEAM!

With the discovery of steam, my humble Feinbrot was transformed! Flavorful, a bit tangy, with a thin, crisp crust, it tastes good with cold cuts, but also with honey or jam.

We especially like it with Fleischsalat, the typical German meat salad, made with ham and pickled cucumbers!

GERMAN FEINBROT

SOAKER
192 g/6 3/4 oz whole rye flour
64 g/2 1/4 oz whole wheat flour
4 g/1/8 oz salt (1/2 tsp)
195 g/6 1/2 fl oz water

STARTER
195 g/7 oz whole wheat mother starter (75% hydration) *)
200 g/7 oz bread flour
120 g/4 fl oz water, lukewarm (1/2 cup)

*) The mother starter can be unfed, from the fridge. If you have a white starter, adapt the flour amounts accordingly. But don't use an unrefreshed rye starter - the bread will be too sour!)

FINAL DOUGH
all soaker and starter
56 g/2 oz bread flour
10 g/1/3 oz salt
1 g ground bread spices (anise, caraway, fennel, coriander **)

**) For easier use, put equal amounts of anise, caraway, fennel in a spice mill, and give it a couple of turns. I like to make some breads with coriander only, therefore I use a separate mill for it.

DAY 1
Evening:
In two separate bowls, mix soaker and starter. Cover, and leave at room temperature overnight.

DAY 2
Morning:
Mix together all ingredients for final dough, 1 - 2 minutes at low speed (or by hand), until all flour is hydrated, and a coarse ball forms. Knead 4 minutes at medium-low speed (or by hand). Let dough rest for 5 minutes, then knead for 1 more minute, adjusting with a little more flour or water, if needed. (It should feel tacky, but not really sticky).

Place dough in an oiled container, cover, and let rise at room temperature, for approximately 4 - 5 hours, or until it has grown to about 1 1/2 times its original size.

Transfer dough to a lightly floured work surface. Shape it into a boule, and place in floured banneton, seam side up.

Proof at room temperature for about 2 1/2 - 3 1/2 hours, or until bread has grown about 1 1/2 times its original size, and a dimple, made with your finger, comes back a little bit, but remains visible. (Don't forget to preheat the oven!)

Preheat oven to 500ºF/260ºC, with steam pan and baking stone.

Turn bread out onto parchment lined baking sheet (or peel to bake directly on the stone). Score.

Place bread in oven, pouring a cup of boiling water into the steam pan. Reduce temperature to 475ºF/246ºC, bake for 10 minutes, then lower oven temperature to 425ºF/218ºC.

After 10 minutes, remove steam pan, rotate loaf 180 degrees for even browning, and continue baking for another 20 minutes, or until crust is deep golden brown, bread sounds hollow when thumped on the bottom, and internal temperature registers at least 200ºF/93ºC.

VARIATIONS:
Feinbrot with spelt:
Replace rye and whole wheat flours in soaker with 256 g spelt flour, use only coriander instead of spice mix.

Feinbrot with oat:
Replace rye in soaker with oat flour.

Feinbrot with nuts:
Add a handful of toasted nuts to the dough (I like it with whole hazelnuts).

KHALID'S GÖTZENBURG-BREAD - WHOLE GRAIN BAKING IN DUBAI

When I - driven from a real "Breaking Bad Bread" experience - challenged my baking buddies from The Fresh Loaf, Facebook and several congenial blogs to create a "Bread for the Knight with the Iron Hand", I promised myself to try all 30 loaves over time.

Well, let's say, almost all of them: the original 1914 German Army Kriegsbrot I'll better keep in reserve when times get tough.

Preparing Khalid's Götzenburg-Brot, I was struck by the idea to not only present his bread on my blog, but, also, finally satisfy my curiosity, asking my Fresh Loaf friend (username: Mebake) how on earth he came to bake whole grain breads in Dubai.

It all started with an idea to make a decent whole wheat bread. I wanted to bake a healthy wholesome loaf that my wife and I would enjoy on a daily basis. In Dubai, United Arab Emirates, most bread is mass produced in commercial plants. 

I wanted something different, and so began searching online for recipes, and stumbled upon thefreshloaf.com website. Encouraged by the knowledgeable, kind, and courteous community members of the site, I learned much about bread making including pre-ferments, and the merits of slow fermentation. 

Without hesitation, I joined the community and began baking bread and sharing my results though my online blog. Prior to this point , I had never been exposed to Artisan breads of any kind.

I bought several books, read blog posts, and watched many online videos on bread making. Soon, I felt that bread making resonates well with me like no other hobby I have ever tried before. Furthermore, I was charmed by the idea of baking bread from scratch using basic ingredients. 

With no reference points, and with the help of my keen wife, I started baking feverishly. At times, she would sarcastically call the dough: the “other lady”! as I spent hours and days pouring over the bread books and trying different recipes. 

The early breads were quite sour and bitter, but as I continued to bake on a weekly basis, results where slowly improving until I finally baked a whole grain loaf I could call decent. 

After the successful bake, I began exploring rye, and soon learned to appreciate the subtle earthy-sweet flavor notes of whole grain rye breads. To improve flavor, I bought a German electric mill (Hawos –Easy) and began milling wheat and rye kernels, and using the fresh flours in my bread. The flavor was so exceptional; it was quite a revelation to me.  

Now, I have sacks of 25 kg of flour lying in my house , a  mini old fridge where freshly ground grains reside, and a recently bought 4 tray convection oven to increase my capacity. I’ve also sourced some organic Rye , and wheat flours from a German culinary wholesale distributor in Dubai. 

I have a full time desk job, but bake for a monthly local event that is held in a shopping mall in Dubai: The Arts and Crafts Market.

I hope to start an Artisan Bakery in Dubai in the not too distant future.

A name (and facebook page) for his bakery exists already: The Golden Wheat Bakery!

Khalid's hearty sourdough has a slight hint of sweetness from soaked, pureed raisins. We liked it a lot, and I'll definitely bake it again.

I made two small changes to his original recipe, adding the raisin puree right away to the final dough (it appeared a bit dry), and baking the bread with steam, since I like the crust to be a bit thinner.


KHALID'S GÖTZENBURG BREAD WITH WHEAT,  RYE & SPELT

Raisin Puree
50 g/1.8 oz raisins
50 g/1.8 oz water, boiling

Levain
25 g/0.9 oz mother starter
106 g/3.7 oz water
60 g/2.1 oz bread flour
44 g/1.6 oz whole wheat flour
30 g/1.1 oz whole spelt flour
15 g/0.5 oz whole rye flour

Final Dough
100 g/3.5 oz raisin puree (all)
280 g/9.9 oz levain (all)
167 g/5.9 oz bread flour
131 g/4.6 oz whole wheat flour
87 g/3.1 oz whole spelt flour
44 g/1.6 oz whole rye flour
242 g/8.5 oz water
12 g/0.4 oz salt


DAY 1
Mix all ingredients for levain, until well combined. Cover, and leave at room temperature overnight.

In small bowl, pour boiling water over raisins. Cover, and let soak overnight.

DAY 2
Using a blender or immersion blender, puree raisins and any remaining soaking water.

Place raisin puree, flours and water for the final dough in mixer bowl. Mix, until all flour is hydrated. Leave for 30 - 60 minutes (autolyse).

Add levain and salt, and knead at low speed for 5 minutes. Let rest for 5 minutes, then resume kneading for 2-3 minutes at medium-low speed.

Place dough in a lightly oiled bowl

Transfer dough to lightly oiled bowl, cover, and let ferment for 2 - 2 1/2 hours, with 1 x stretch & fold after 60 minutes. It should grow about 1 1/2 times its original size.

Transfer dough to lightly floured work surface and pre-shape into a round. Cover, and let rest on the bench for 15 minutes, then shape into a boule or bâtard.

Place, seam side up, in a floured rising basket

Place, seam side up, in a well floured rising basket, sprinkle with flour, and let rise, covered, for about 2 hours, or until it has grown about 1 1/2 times its original size (a dimple, made with your finger, should come back a little, but remain visible).

The bread has grown by about 1 1/2 times its original size

Meanwhile preheat oven to 482ºF/250ºC, including baking stone and steaming device (or don't steam, if you like a rather thick crust).

Transfer bread to parchment lined baking sheet (or bake directly on baking stone). Score.

Ready for the oven

Bake for 15 minutes, with steam, then remove steam pan, rotate bread 180 degrees, and reduce temperature to 410ºF/210ºC. Bake for another 25 - 30 minutes, until crust is a dark reddish brown and the internal temperature registers at least 200ºF/93ºC.

Let bread cool completely on wire rack before slicing.

WORTHY OF A KNIGHT - GÖTZENBURG BREAD

Before I present you with the amazing bread collection you submitted for my Knight with the Iron Hand challenge, I owe you my own creation!

These goals I had in mind when I thought about the formula. I wanted to create a bread with grains and seeds used in German breads, preferably growing in the Baden-Württemberg region.

Though worthy of Schloss Jagsthausen's long tradition and its noble, iron-fisted ancestor, my bread should meet modern baking standards, not authentic medieval bread tradition (weevil-count >100/kg!)

I also aimed for a bread that was not too fussy, and could be prepared either by the pastry chef of Schlosshotel Götzenburg's fabulous restaurant or outsourced to a local bakery. Therefore no holey loaf à la Tartine, and no overly complicated procedure.

Introducing a porridge to power up the hydration without making a whole grain dough too wet - this idea I happily took from Chad Robertson's "Tartine No. 3". It would work its magic in my less holey bread, too.

This hearty loaf with a nice crust and moist crumb (or another one of the fabulous challenge breads) is exactly what we would love to find on Schlosshotel Götzenburg's breakfast buffet, when we visit next time!

GÖTZENBURG BREAD

Rye Starter
21 g rye mother starter 100%
40 g water
34 g whole rye flour
30 g whole spelt flour

Millet Porridge
18 g millet
37 g water

Final Dough
all porridge
all starter
243 g water
2 g instant yeast
205 g bread flour
60 g whole spelt flour
40 g barley flour
60 g einkorn flour
8 g sea salt
7 g honey


DAY 1
Morning:
Mix starter. Cover, and leave at room temperature.

Place millet and water in small sauce pan. Bring to a boil, then cover and simmer for about 15 minutes, until millet is soft (add a little more water, if necessary). Set aside to cool.

Evening:
Mix all dough ingredients at lowest speed (or by hand) for 1-2 minutes, until all flour is hydrated. Let dough rest for 5 minutes. Knead at medium-low speed (or by hand) for 6 minutes (dough should still be somewhat sticky).

Repeat the folding from right...
...and left to make a package.

Transfer dough to an oiled work surface. With oiled hands, stretch and pat into a square. Fold from top and bottom to the middle in 3 parts, like a business letter, then from both sides. Gather package into a ball and place, seam side down, into an oiled bowl.

Cover, and let rest for 10 minutes. Repeat stretching and folding 3 more times at 10-minute intervals. After the last fold, place (well covered) overnight in the fridge.


DAY 2
Remove dough from refrigerator 2 hours before using.

Preheat oven to 450ºF/232ºC, including baking stone and steaming device.

Transfer dough to lightly floured work surface, and shape into a boule or bâtard. Place, seam-side up, in well-floured rising basket.

Proof for 45 - 60 minutes, or until bread has grown 1 1/2 times its original size (finger poke test). Turn out on parchment lined baking sheet (or on peel to bake directly on baking stone). Score as desired (don't be too timid, cut decisively!).

Bake bread for 20 minutes, with steam. Rotate bread 180 degrees for even browning, remove steam pan, and continue baking for another 20 minutes, or until loaf is nicely browned and registers at least 200ºF/93ºC on an instant read thermometer.

Let bread cool on wire rack.

SPELT PUMPKIN BREAD

It's October, almost November, but from the glorious sunshine and balmy temperatures you wouldn't think it is.

Only waking up when it's still dark, and having dinner in the kitchen instead of the porch are reminders of the upcoming winter.

Pumpkins are everywhere. The pumpkin dish I grew up up with, and loved, were my Pomeranian grandmother's wonderful pickled sweet and sour pumpkins.

Every year she bought one of those giant pumpkins, and, during an afternoon of hard labor, cut it down, cooked it with sugar, vinegar and spices, and filled a long line of glasses with golden pumpkin chunks embedded in aromatic syrup.

Every family member received his or her share, to be served with roasts and rice dishes.

After "striking gold" with Dan Lepard's wonderful Pumpkin Whey Bread, I got back to one of my seasonal German breads, Kürbisbrot ("Pumpkin Bread").

It doesn't have such an interesting ingredient like whey (also hard to come by, if you are not in the yogurt making business.) But the German cousin is made with spelt, and therefore a little heartier.

The autumnal pattern is made with a large, leaf-shaped cookie cutter, pressed into the dough before it rises.

Both pumpkin breads share the same golden crumb, and nutty crunchiness from the toasted pumpkin seeds - and both taste equally good!

SPELT PUMPKIN BREAD


Pumpkin puree and seeds
150 g water, lukewarm (95ºF/35ºC)
    4 g instant yeast
500 g whole spelt flour (or 1/2 spelt + 1/2  bread flour)
  11 g salt
    3 g dark brown sugar
½ tsp. cinnamon
 1 tsp. ground ginger
28 g/2 tbsp. butter, melted
212 g pumpkin puree (1/2 can)
  60 g pumpkin seeds, toasted

DAY 1
Stir yeast into the warm water, to dissolve.

Add all dough ingredients in mixing bowl. Stir together for 1 - 2 minutes at low speed (or with large wooden spoon), until all flour is hydrated. Let dough rest for 5 minutes.

Knead dough for 2 minutes at medium-low speed (or by hand), adjusting with more water as needed, (dough should be smoother but still sticky.) Continue kneading for another 4 minutes. Dough should be still slightly sticky. 

Transfer dough to lightly oiled or wet work surface. With wet or oiled hands, pat and stretch dough into a rough square. Fold it from top and bottom in thirds, like a business letter. Repeat with sides left and right.

Pick dough ball up, tucking sides under, and place it, seam side down, in a lightly oiled bowl. Cover, and let rest for 10 minutes. Repeat this stretch and fold 3 times. After the last fold, place dough in oiled container with lid, and refrigerate overnight.

 DAY 2
Remove dough from refrigerator 2 hours before using.

Preheat oven to 450ºF/230ºC, including a steam pan.

Shape bread into a (not too tight) ball and place it, seam side down, on a parchment lined baking sheet. Brush it with milk, and using a large leaf shaped cookie cutter, press down deeply to score. Mist loaf with spray oil and cover with plastic wrap (or clean kitchen towel).

Let bread ferment at room temperature for 45 - 60 minutes, until it has grown to 1 1/2 times its original size, and dough doesn't spring back when gently poked with a finger.

Place bread in oven, pour a cup of boiling water into steam pan, reduce heat to 400ºF/200ºC, and bake bread for 20 minutes. Remove steam pan, rotate loaf 180 degrees, and continue baking for another 15 - 20 minutes, until the bread is golden brown, and registers at least 195ºF/90ºC on an instant-read thermometer.

AROMA BREAD - A LOVE STORY

One of my most favorite cookbooks is "Ancient Grains for Modern Meals".

Award winning Author Maria Speck combines her German father's love for hearty grains, and her Greek mother's culinary talents in dishes that make you grab your shopping bag, hop on the bike or in the car, and drive to the next natural food store to buy those ancient grains, veggies and fruits for Maria's mouthwatering meals.

Normally I consider a cookbook worth its money, if it contains at least one recipe I really like to cook. "Ancient Grains for Modern Meals" has so many, that I still haven't prepared all the ones I want to try. (No, I DON'T get a commission!)

A few of the dishes are breads, among them the Aroma Bread. A no-knead bread by trade, its evocative name spiked my interest, and my love affair with the spicy loaf began.

"Ancient Grains" is very user friendly, with detailed, easy to follow instructions, no sophisticated culinary equipment needed.

No-knead breads meet these expectations, a mixing bowl, a wooden spoon, a clean kitchen towel, a Dutch oven, and you are all set.

These low maintenance breads don't want you to slave over them, they are free spirits, and perfectly willing to go and develop themselves, if you give them enough time (and a little bit of yeast.) They show their gratitude by rising eagerly, and tasting better than many other loaves that had been kneaded, slapped and punched into submission.

You have the choice between a crunchy, and an XX-crunchy Aroma Bread. If you opt for the super chewy, you need to soak whole grain berries for several hours, before mixing them into the dough. This is definitely no impulse bread, so plan to bake it 24 hours ahead.

Maria called her loaf "Aroma Bread" for a good reason. This truly aromatic loaf is not for the faint hearted! But in our old home country Germany breads are often flavored with coriander, fennel and caraway, these herbs are even commonly referred to as "Brotgewürz" (bread spices.) You can use them whole, or coarsely ground.

As easy as no-knead breads are to mix, handling wet dough always remains a bit of a challenge. And here comes the sticky wicket: the dough has to be shaped into a loaf, and transferred from the mixing bowl to a place where it can rise. And, after that, it has to be turned out into a piping hot Dutch oven.

That leaves you with two choices: either to lower the bread gently into the pot, risking nasty burns (aka Baker's Badge of Honor). Or you let it drop from a secure height - and have your bread sigh and deflate!

Maria solves the problem by having you scrape the bubbly fermented mass onto a well floured countertop (flour is your friend, creating a barrier between the sticky dough and its surroundings), so that you can fold it into a round.

Then you place the loaf on a floured kitchen towel, fold the corners over it, and, voilà, you have a cozy proofing place. Of course, it takes a rather amorphous shape from being bundled in a kitchen towel. 

My first bread went into a large, oval Dutch oven (I didn't have a smaller one), and eagerly spread to fill the void.

Baked into a rather flat loaf, it reminded me of those little things that scurry away when you lift a stone. But when I took the first bite, my eyes glazed over. My flat roly poly bread tasted awesome!

The next time I decided to set the bread more boundaries, changing its Armadillidiida appearance. Instead of proofing it simply in a towel, I used my pretty brotform to contain it.

It came out of the oven nice and round, but still... way too much room to spread during the baking.

Alas! My main source for discounted kitchen gadgets, Home Goods, was letting me down when I needed it most. Still without the right sized pot, I decided to experiment with a free-standing, self- contained sourdough version, made with pre-doughs à la Peter Reinhart's "Whole Grain Breads".

My hearth baked sourdough loaf turned out beautiful. Though I couldn't find much difference in taste, this method is a good alternative for people who either have no Dutch oven, love wild yeasts, hate wet doughs, or prefer to bake their bread as free-standing loaf.

The next time I visited Marshall's (another treasure trove for kitchen stuff) I found a snazzy turquoise cast iron pot in just the right size - for half the price! And soon was mixing the ingredients for my fourth Aroma Bread - again the no-knead version.

And out of the oven came (TATAAA!): the perfect Aroma Bread - looking just as good as it tasted!

The last task left to do for inquiring minds, was to try the sandwich version of Aroma Bread, baked in a loaf pan. A cold cut-friendly shape, and the easiest way to make this wonderful bread. And it has an additional benefit: you can bake more than just one loaf at a time. (My customers will be happy!)

COMMENTS:
  • If you use the optional whole grain berries (I made the bread with and without, both versions are great) add more salt: 9 g/0.3 oz instead of 7 g/0.25 oz. 
  • Instead of sunflower seeds you can also take pumpkin seeds (or a mixture of both.)

  • Toast the seeds, before adding them to the dough.
  • For an easier, risk free transport of the proofed bread into the hot pot, use a large piece of parchment paper as a sling to lower the bread gently into the pot. You don't have to remove it.

Makes 1 (2-pound) loaf

Grain Berries (optional):
1/2 cup whole wheat, rye, kamut, or spelt berries
cold water, for soaking

Dough:
340 g/12 oz whole spelt flour (3 cups)
107 g/ 3.75 oz whole rye flour (1 cup)
  57 g/2 oz coarse or medium stone ground cornmeal (1/2 cup)
  67 g/ 2.35 oz sunflower or pumpkin seeds, toasted (1/2 cup)
  35 g/ 1.25 oz flax or sesame seeds, toasted (1/4 cup)
   2 tbsp. aroma spice blend*)
    7 g/ 1 1/2 tsp fine sea salt (or 9 g/0.3 oz if using whole grain berries)
    1 g/ 1/4 tsp. instant yeast
     all soaked whole grain berries (if using)
475 g/2 cups cold water
cornmeal, for sprinkling

*) Aroma spice blend: mix 6 tablespoons whole coriander seeds with 3 tablespoons each fennel and caraway seeds (enough for 6 loaves).

DAY 1
In the morning, place whole grain berries in a bowl and cover with at least 1-inch cold water. Cover, and leave at room temperature to soak. Before using, drain them through a strainer (by the way, the soaking water is an excellent fertilizer for your plants.)

Mixed dough - I used black sesame seeds for a nice contrast

In the evening, whisk together all ingredients for the dough in a large bowl, except for soaked grain berries and water. Scatter grain berries on top, and add almost all the water. Stir with a dough whisk or wooden spoon until all flour is hydrated. (Dough will be wet and sticky, if not, add a bit more water.) Cover with plastic wrap, and let sit at room temperature to ferment for 12 - 18 hours.

Overnight the dough grows to a puffy, swollen mass

DAY 2
Use a rising basket, (or improvise by placing a clean kitchen towel over a basket or bowl.) Sprinkle with fine cornmeal (other flours work, too). Generously flour your work surface. Using a bowl scraper or rubber spatula, scrape the stringy, bubbly dough onto the work surface.

With floured hands (or two oiled bench knifes or bowl scrapers), fold dough exactly 4 times, always towards the center, from the top, the bottom, the right and the left side. Turn the dough package around and place it, seam side down, into the towel lined rising basket. Sprinkle with cornmeal or flour, cover with a kitchen towel, and let it rise for about 1 hour.

After 30 minutes, position a rack in the bottom third of the oven, and preheat oven to 475ºF. Place a 4 1/2- to 5 1/2-quart cast iron pot or Dutch oven (with lid) on the rack to heat up.

When the dough has grown about 1 1/2 times its original size, poke it gently with your finger. The dimple should not fill up again (it can come back a little bit, but should remain visible). If not, wait another 15 minutes.

Fitting snugly in the Dutch oven, the bread will rise more than spread.

Remove hot pot from the oven and open the lid. Gently turn out the proofed bread from the rising basket into the Dutch oven, seam side up, guiding it with your hand, (or turn it out onto a parchment paper and, holding the paper on both sides, gently lower the bread into the pot (with paper).

Cover with the lid, and bake for 30 minutes. Uncover, and continue baking for 20 - 25 minutes, until the loaf is nicely browned, sounds hollow when thumped on the bottom, and an instant thermometer, inserted in the middle, registers 200ºF.

Remove bread from cast-iron pot and transfer it to a wire rack to cool.


AROMA SANDWICH LOAF

Grease a 9 x 5-inch loaf pan with oil, and sprinkle it with 1-2 tablespoons of flax- or sesame seeds. After folding the risen dough, place it, seam side up, right in the prepared loaf pan. (My suggestion: brush top with water, and sprinkle it with more flax- or sesame seeds.) Let it proof as described.

Preheat oven only to 425ºF, placing an oven proof pan or broiler tray for steaming on a the lowest level to heat up.

When loaf is proofed, place in the middle of the oven, pour 1 cup boiling water in the hot steam pan , and bake loaf for 30 minutes. Remove steam pan, rotate bread 180 degrees for even browning, and  bake it for about 30 minutes more, or until it registers 200ºF.

Let loaf cool in the pan for 5 minutes, than turn it out onto a wire rack (if it sticks to the pan, loosen it with a butter knife or spatula.)


AROMA SOURDOUGH BREAD 

Starter:
  64 g/2.25 oz rye mother starter (100% hydration)
205 g/7.25 oz whole spelt flour
124 g/4.4 oz lukewarm water

Soaker:
  57 g/2 oz coarse or medium ground cornmeal
  75 g/2.65 oz whole rye flour
  92 g/3.25 oz whole spelt flour
168 g/6 oz water
    4 g/0.15 salt

Final Dough:
   all soaker and starter
  43 g/1.5 oz whole spelt flour
    5 g/0.2 oz salt
    5 g/0.2 oz instant yeast
  67 g/2.35 oz sunflower- or pumpkin seeds, toasted
  35 g/1.25 oz sesame seeds, toasted
    2 tbsp. aroma spice blend (see original recipe)
182 g/6.4 oz water, add more as needed

DAY 1
In the morning, stir together all ingredients for soaker. Cover, and leave at room temperature.

Mix all starter ingredients at low speed (or by hand) for 1 minute, until all flour is hydrated. Knead for 2 minutes at medium-low speed (or by hand.) Let rest for 5 minutes, then resume kneading for another minute. Cover, and leave at room temperature.

In the evening, mix all ingredients for final dough for 1- 2 minutes at low speed (or by hand) until all flour is hydrated. Knead at medium-low speed (or by hand) for 4 minutes, adding more water as needed. Dough should be very tacky and not dry to the touch. Let dough rest for 5 minutes, then resume kneading for 1 more minute. (Dough should be tacky, but not sticky.)

Gather dough into a ball, and place it in a lightly oiled bowl, turning it around to coat it with oil. Cover well, and place it in refrigerator overnight.

DAY 2
Remove dough from fridge 2 hours before using, to warm up. (It should have risen nicely overnight.)

Preheat oven to 500ºF, with bread stone and steam pan.

Transfer dough to lightly floured work surface, and shape into a round. Place boule, seam side down, in a floured rising basket. Sprinkle with more flour. Cover, and let it rise for 45 - 60 minutes, or until it has grown 1 1/2 times its original size, and a dimple stays visible when you gently poke it with a finger.

Turn bread out onto a parchment lined baking sheet (or use a peel) and place it in the oven, pour a cup of boiling water in the steam pan and reduce heat to 475ºF. After 10 minutes, reduce heat to 425ºF. Continue baking for another 10 minutes, rotate bread 180 degrees, remove steam pan, and bake for about 30 minutes more, or until it is nicely browned, sounds hollow when thumped on the bottom, and registers 200ºF.

Cool on wire rack.
