GLUTEN FREE DINNER ROLLS - WITH OAT, BUCKWHEAT, TEFF, OR HAZELNUTS

I'm a curious person and love trying out new things. When "Cook's Illustrated", one of my favorite food magazines, published a gluten free cookbook, I bought it, out of curiosity, even though I have no problems with gluten.

I was especially interested in how the culinary geeks from "America's Test Kitchen" got to their good looking results. My own trials, though taste-wise acceptable, left a lot to be desired regarding their consistency.

When my lovely hairstylist asked me whether she could order some gluten free rolls for her Christmas menu, I jumped at the opportunity to try a recipe for dinner rolls from "The How Can It Be Gluten Free Cookbook".

The rolls get their necessary structural support from psyllium husk, a fiber supplement from the natural food aisle, more known for its beneficial effect on all kinds of digestive maladies.

The additional baking powder and lemon juice help with softening the crumb, making it less dense. The flours should be finely ground - I used Bob's Red Mill brand.

My first trial resulted in nice fluffy rolls with a consistency like English Biscuits - better than anything I had seen so far in gluten free breads.

But I was less enthusiastic, when I sampled the dinner rolls. They tasted bland and a bit doughy. With jam on top this was less noticeable, and, when toasted, they were okay.

Danielle assured me, that she liked the gluten free rolls - but I couldn't stop thinking about them. I don't like selling something I'm not 100% satisfied with.

There was nothing to criticize about the structure of the dinner rolls - the test cooks with their scientific approach had really given their best.

But how could I achieve a better taste for my rolls without risking their fragile, gluten-less structure? Exchange a part of the rice flour, potato and tapioca starch for a gluten free flour with a more assertive taste?

Four different gluten-free flour mixtures

In my pastries, I often substitute a quarter of the white flour with whole grain - without any problem. I would to try the same with the dinner rolls.

To keep it simple, I decided to limit my trial to four likely candidates: oat, buckwheat, and teff, and one nut meal: hazelnut. Since I didn't want to feed my long-suffering husband with gluten free test rolls for weeks, I intended to use all four flours in one pull-apart cluster.

After some calculations, I prepared four flour mixtures (for two rolls each). Then I mixed these small dough amounts with a handheld mixer, one by one. Since there was no gluten structure to develop, longer kneading was not necessary.

I was rather relieved when I was able to shape all of the doughs into rolls - the one with nut meal (my secret favorite!) was especially sticky -   (you need to roll them in your wet hands, like dumplings).

They rose as nicely as the ones from the original recipe, and showed the same fine pores when I cut them.

And the best of it - each of the four test candidates tasted good (even when eaten on its own!). To make a side-by-side comparison easier, I cut the cluster into slices, like a loaf, instead of breaking it in single rolls.

GLUTEN FREE DINNER ROLLS WITH OAT, BUCKWHEAT, TEFF OR HAZELNUTS  (adapted from ATK's "The How Can It Be Gluten Free Cookbook")

(8 Rolls)

Ingredients:
315 g/1 1/3 cups warm water (110ºF/40ºC)
2 tsp lemon juice
2 large eggs
1 egg yolk (save egg white for glaze)
185 g/6.5 oz white rice flour (finely ground)
58 g/2 oz brown rice flour (finely ground)
100 g/3.5 oz oat, buckwheat, or teff flour, or finely ground hazelnuts
53 g/1.9 oz potato starch (not potato flour!)
23 g/0.8 oz tapioca starch or flour
49 g/1.7 oz non-fat dry milk powder
13 g/2 tbsp psyllium husk
20 g/2 tbsp sugar
7 g/2 1/4 tsp instant yeast
6 g/2 tsp baking powder
7 g/1 1/2 tsp salt
85 g/3 oz butter, cut in pieces, softened

1 egg white, mixed with a pinch of salt and 1 tsp water, for brushing
rolled oats, seeds, or chopped nuts, for topping

Spray a 23-cm/9-inch round cake pan with oil spray (a springform pan works fine, too).

In a liquid measuring bowl, whisk warm water, lemon juice and egg plus yolk together.

Mix together all liquid ingredients

In the bowl of a stand mixer, fitted with paddle, on low speed, mix together gluten-free flours, potato starch, tapioca, milk powder, psyllium, sugar, yeast, baking powder, and salt, until combined.

Slowly add water mixture, mixing until dough comes together, about 1 minute, scraping bowl down as needed. Add butter, increase speed to medium, and beat for about 6 minutes, until all ingredients are well blended (dough will be sticky!)

Transfer dough to a lightly oiled work surface. Divide it into 8 approximately equal pieces. With wet hands, roll each piece in your palms as if you would shape a dumpling. Place one roll in the center of the pan, and arrange the other seven around it.

Mist rolls with oil spray, cover loosely with plastic wrap, and proof for about 1 hour at room temperature (they should double in volume). 

Preheat oven to  375ºF/190ºC (steaming not necessary).

Brush rolls with egg glaze, and sprinkle with the topping of your choice.

Bake rolls for about 40 - 50 minutes (rotating pan 180 degrees after half the baking time, for even browning), until they are golden brown.

Allow rolls to cool for 10 minutes in the pan on a wire rack, then invert pan onto rack. Let them cool for 10-15, and serve warm.

We also liked them toasted (especially the ones with hazelnuts were delicious!)

They keep (wrapped) at room temperature for 3 days, and, also, freeze well (wrap in plastic and place in a freezer bag).

GLUTEN-FREE MULTI-COLOR DINNER ROLLS  (8 Rolls)

Place dry ingredients, except for the 100 g oat, buckwheat, teff or hazelnut flour, in a medium bowl. Using a whisk, stir together until well combined. Distribute the flour mixture evenly over 4 small bowls ((105 g/3.7 oz each)

Add 25 g/0.9 oz of either oat, buckwheat, teff or ground hazelnuts into each bowl, and whisk to combine.

Pour about 98 g/3.4 oz of the liquid ingredients into each of the small bowls. With handheld mixer, mix each dough, one by one, until well blended.

Place 21 g/0.7 oz of the butter pieces into each of the bowls. Again, mix each dough, one by one, until well blended.

With wet hands, shape 2 rolls from each dough. Arrange rolls in prepared pan, placing one in the center.

Otherwise, follow the steps in recipe above.

SPROUTED GRAIN BREAD

A while ago I saw a bread recipe that intrigued me. Not only had it a lot of grains, but, also, three different kinds of sprouts: wheat, lentils and quinoa.

To make a sprouted grain bread you have to plan ahead, because it takes about 2-3 days until the first little white tips show up on the soaked grains.

Once sprouted, the grains are pureed into a smooth paste that, together with toasted sunflower-, pumpkin- and sesame seeds, gives this interesting bread its unique taste.

I changed the original recipe, created by "America's Test Kitchen", quite a bit. Though I don't mind a hint of sweetness, I don't like "falling into the honey jar" (as the Germans say), and 1/3 cup of honey in the dough seems a lot, even with the potentially bitter bran and fibers of the whole grains.

Instead of long kneading I prefer stretching and folding the dough, combined with an overnight rest in the fridge.

This slow fermentation ensures good digestibility, and the aroma of the bread has more time to develop.

And, as an additional benefit, you need less yeast.

I was a bit leery whether you would taste the lentils (as I had experienced with some gluten free pastry made with bean meal.)

The bread looked so appetizing, when it came out of the oven, that we could hardly wait until it had cooled down enough to be cut.

Fortunately my fears proved to be unfounded, my sprouted grain bread was as tasty as it looked. No harsh legume aroma met our taste buds, the lentils blended harmoniously with the other ingredients.

The bread was also good for toasting, and we liked it especially with butter and honey.


SPROUTED GRAIN BREAD   (adapted from Cook's Illustrated)

Sprouted Grains
140 g/4.9 oz wheat berries     (3/4 cup)
  43 g/1.5 oz quinoa                (1/4 cup)
  41 g/1.4 oz brown lentils      (1/4 cup)
    2 cups cold water

Dough
 ½ cup warm water                 (110ºF/43ºC)
 42 g/1.5 oz honey                  (2 tbsp)
 36 g/1.3 oz sunflower seeds  (1/4 cup)
 20 g/0.7 oz pumpkin seeds    (2 tbsp)
 17 g/0.6 oz sesame seeds       (2 tbsp)
274 g/9.7 oz bread flour
    4 g/0.14 oz instant yeast
    7 g/0.25 oz salt                    (1 1/2 tsp)
1 egg white, mixed with 1 tsp. water, for brushing


DAY 1:
For the sprouted grains, combine wheat berries, quinoa, lentils and water in large bowl, cover, and let soak at room temperature for at least 12 hours (and up to 24 hours.)

DAY 2-3:
Drain grains through fine-mesh strainer (caution: if the mesh is not fine enough the quinoa seeds will fall through), then return them to the bowl.

Cover, and leave at room temperature, rinsing and draining grains daily, until small sprouts appear on each type of grain. (At this point, they can be patted dry and refrigerated for up to 1 week.)

DAY 3-4:
Process sprouted grains in food processor to a smooth, sticky paste, 2-3 minutes.

Combine seeds in small bowl. Toast 45 g/6 tbsp. of the seeds (reserve remaining seeds for topping.) Whisk water and honey together in measuring cup. 

Combine sprouted grains, bread flour, yeast, and salt in bowl of stand mixer with dough hook. Add water/honey mixture, while mixing on low speed for 1-2 minutes, until dough comes together and all flour is hydrated. Let it rest for 5 minutes.

Knead dough on medium-low speed for 6 minutes, slowly adding toasted seeds until dough is smooth, elastic, but still a bit sticky (dough should clear sides of bowl, but stick a bit to bottom.)

Transfer dough to lightly oiled or wet counter. With oiled or wet hands, stretch into a rough square, and fold from top and bottom in thirds, like business letter. Then fold from both sides. Gather dough into a ball, and place, seam side down, into lightly oiled bowl. Cover, and let it rest for 10 minutes.

After the last fold refrigerate the dough overnight

Repeat this stretching and folding 3 times in 10 minute intervals. After the last fold, place dough in refrigerator for a slow overnight rise.


DAY 4-5:
Remove dough from refrigerator, and let sit at room temperature for 2 hours, or until almost doubled in size.

Over night the dough has almost doubled

Preheat oven to 425ºF/220ºC. Line baking sheet with parchment paper.

Shape dough into a round, and place it, seam side down on prepared baking sheet. Brush bread with egg wash and sprinkle with reserved seeds. (No slashing needed.)

Cover, and let bread rise for about 45 - 60 minutes, until nearly grown to double its original size (finger probe: a dimple made with a finger should not close again).

Bake bread at 350ºF/175ºC for 20 minutes, rotate 180 degrees, and continue baking for another 20-30 minutes, until it is golden brown, sounds hollow when thumped on the bottom, and registers 210ºF/99ºC on an instant read thermometer.

Let bread cool on wire rack.

Tastes good as BLT-sandwich, too!

SOUR CHERRY PIE - BIRTHDAY CAKE FOR MY LOVE

When I asked the best of all husbands what kind of cake he would like for his birthday I was pretty sure that he would wish Sachertorte, as usual (he always orders Wiener Schnitzel when we are in Germany, too.) But with an impish grin he retorted: "SOUR CHERRY PIE!".

In principle there's nothing wrong with that - I love pies - but this is a hot button issue in this house. My late mother-in-law was an excellent cook, and, although, like me, an American by marriage only, she mastered this Anglo-American pastry to perfection.

My first trials at making a pie crust ended the same way as my first efforts to bake muffins. As a German used to mix the heck out of cake batters so that no loose flour or (shudder!) lumps of butter remain, my muffins resembled mini pound cakes and my pie bottoms short crust.

Confronted with my first creation, after slaving away for hours in the kitchen, the love of my life uttered the fateful words: "It's not bad, but not quite right, it's not like my mother's. Her sour cherry pie is Thee Best!"

I swore to myself to do better. At my next trial my crust turned out a little flakier, and I wasn't covered in sweat quite as much, but:

"It's not like my mother's - her crust is really flaky!"

After diligently studying numerous baking books and food magazines I finally managed to produce a buttery pie crust that was neither tough, nor too brittle, and didn't get damaged in transition to the pie pan.

"Not bad," conceded my spouse - but somehow the cherry filling of his mother tasted better! That was the last straw - I'd had it. I swore I would never bake another cherry pie as long as stark ingratitude and unflattering comparisons could be expected in this household.

Not that I didn't try to pry the secret of her cherry pie from my wily Venetian mother-in-law when she was still alive. But she eluded easily all sneaky trials to find out, and direct frontal attacks she parried by claiming old age and forgetfulness.

But birthday is birthday, after all, and I had rashly promised the best of all husbands to fulfill his cake wish (are pies really cakes?)

Every baker knows that too much water makes a pie crust tough, but a drier dough is brittle and difficult to work with. Thanks to Cook's Illustrated's scientific approach, this was no longer a problem for me. Unlike water, the alcohol in their Basic Pie Crust with Vodka has the ability to moisten the dough without encouraging gluten development. (Don't worry, you won't taste the vodka.)

I like my pie crusts a little heartier, and exchange a quarter of the white flour with whole wheat or spelt, or, sometimes, substitute 2 tablespoons of flour with nutmeal.

Unfortunately, fresh sour cherries are hard to find in Maine - my own harvest was still a bit too meager this year. Therefore I use lightly sweetened Morello cherries from a glass.

For the filling I adapted a recipe from William-Sonoma "Pie & Tart", but reduced the sugar content and added some lemon zest.

The pie has a decorative lattice top that is easier to make than it looks. Here you find instructions on how to weave it.

You can prepare the crust using a food processor or stand mixer. But keep in mind: for the food processor the fats have to be ice cold, but for the stand mixer fat at room temperature works best.

Weaving a lattice crust is easier than you think

PIE CRUST WITH VODKA
355 g (2 1/2 cups) all-purpose flour (I exchanged 2 tablespoons flour with toasted almond meal.)
1/2 tsp. salt
2 tbsp. sugar
170 g (1 1/2 sticks) cold*) butter, cut in 1/2 cm/1/4" slices
  80 g (1/2 cup) cold*) vegetable shortening, cut in 4 pieces
  1/4 cup/60 ml cold vodka (required, don't substitute)
  1/4 cup/60 ml cold water

*) if you use a mixer instead of a food processors, the fats have to be at room temperature!

CHERRY FILLING
65 g sugar
2 tbsp. corn or potato starch
1 pinch salt
750 g pitted sour cherries (glass), drained (reserve 40 ml of the liquid)
1 tsp. vanilla extract
1/2-1 tsp. lemon zest

Instructions for food processor
Briefly pulse 200 g (1 1/2 cups) of the flour with salt and sugar. Add butter and shortening, and process, until uneven clumps (like cottage cheese curds) start to form, and all flour is coated. Scrape bowl with rubber spatula and redistribute dough evenly.

Add remaining flour and pulse 4 - 6 times, until mixture is evenly distributed around bowl and has been broken up. Empty mixture into medium bowl.

Instructions for stand mixer:
(Butter and shortening have to be at room temperature.) Briefly mix 2/3 of the flour, salt and sugar at medium-low speed, until combined. Add butter and shortening and mix just until dough forms rough ball around paddle.

Scrape bowl with rubber spatula, and add remaining flour. Mix very briefly at medium-high speed, until dough has just broken up in smaller pieces. Transfer to medium bowl.

Sprinkle vodka and water over mixture. With rubber spatula, use folding motion to mix, pressing down on mixture until dough is slightly tacky and sticks together.

Divide dough into 2 equal balls and flatten each into 4-inch/10 cm disk. Cover each with plastic wrap and refrigerate at least 45 minutes (or up to 2 days.)

Remove 1 disk from refrigerator and roll out on generously floured work surface to 12-inch/30 cm circle about 1/8-inch/3 mm thick.

Roll dough loosely around rolling pin and unroll into pie plate, leaving at least 1-inch/2.5 cm overhang. Ease dough into plate by gently lifting edge of dough, while pressing into plate bottom with other hand. Refrigerate until dough is firm, ca. 30 minutes (or freeze for 15 minutes.)

For the filling, stir together sugar, starch and salt in a small bowl. Place drained cherries in large bowl. Sprinkle with sugar/starch mixture, and toss around until evenly distributed around cherries.

Add vanilla and reserved cherry juice, stir until well combined. Immediately spoon filling into pie crust, and top with butter pieces. Place in refrigerator.

For the lattice crust roll out second piece of dough in the same way to 12-inch/30 cm circle. Using pizza roller or sharp knife, cut into 16 stripes (1 1/2-inch/2 cm wide). (See here for instructions.)

Place one half of the stripes horizontally across cherry filling (starting with long stripe in the middle).  Fold the 2., 4., 6. and 8. stripe in the middle, and over to the left side. Then place a long stripe vertically in the middle of the pie, (across stripes that are not folded over.) Unfold stripes back, so that they lay over the vertical stripe.

Fold over 1., 3., 5. and 7. stripe to the left. Place another stripe vertically on filling. Unfold stripes back, so that they lay over vertical stripe.

Continue weaving this way, until half of the pie is covered. Then start weaving the other side, folding every other stripe to the right. When the lattice crust is done, shorten overhanging stripes, until the are level with rim of the pie pan.

Put rimmed baking sheet, upside down, in lowest position, and preheat oven to 425ºF/220º C.

Place pie on hot baking sheet and bake for 15 minutes. Reduce temperature to 350ºF/180ºC  and continue baking for 40 - 50 minutes, until crust is deep golden brown, and filling is bubbling at the rims.

Let pie cool on wire rack.

TIP: To warm up pie, bake for ca. 10 minutes in preheated oven at 350ºF/180ºC. You can also freeze the pie, wrapped in plastic foil, in a zipLock bag.
