I never had a problem with the rising or consistency.<br />The plum compote is very easy, you don't have to measure the ingredients exactly: <br />Place 1 pound of plums, halved and pitted, in a sauce pan. Add about 1/3 - 1/2 cup of red wine, 1 stick of cinnamon, and 1/2 cup brown sugar. Bring to a boil, reduce heat to a simmer, cover, and cook for ca. 10 minutes, or until plums are soft (but not turned to mush). Let compote cool a bit, then adjust with more sugar to taste.
