If you look at Peter Reinhart's, Hamelman's, or any recipes of those bread baking popes, they use vital wheat gluten very rarely, for higher percent rye breads, if at all.Karin Andersonhttps://www.blogger.com/profile/08328101125789534921noreply@blogger.comtag:blogger.com,1999:blog-1266479675389453667.post-66766595052257525142012-06-06T17:15:11.837-04:002012-06-06T17:15:11.837-04:00Interesting, thanks!! I hardly ever use vital wheat gluten, only for Vollkornbrot or other low gluten breads. Wheat breads rise just fine without it, and American wheat has more gluten than European wheat, anyway. I know, King Arthur propagates it with photos of higher rising breads, but why add a dough enhancer if it's not really necessary.Karin Andersonhttps://www.blogger.com/profile/08328101125789534921noreply@blogger.comtag:blogger.com,1999:blog-1266479675389453667.post-30787127420623078232012-06-05T13:11:27.162-04:002012-06-05T13:11:27.162-04:00After printing out the recipe and taking a closer ...After printing out the recipe and taking a closer look, I was wondering if that's really fourteen gram of yeast. Is it because of the use of 100% WW flour or the large amount of sour cream (which makes it rich)? Also, do you like to use Vital Wheat Gluten (I do)? Thanks in advance for answering my questions :o)Hanaâhttps://www.blogger.com/profile/15660317268731033542noreply@blogger.comtag:blogger.com,1999:blog-1266479675389453667.post-45540652638965201682012-06-05T12:58:20.305-04:002012-06-05T12:58:20.305-04:00I guess I'm lucky to have an Aldi store less t...I guess I'm lucky to have an Aldi store less than 2 miles from my house :o) The box said that the Muesli was imported from Germany. Since it was a Special Purchase (one time thing), I bought 2 kinds: one with nuts for hubby and one without nuts (but with all sorts of yummy dried fruit like dates, figs, banana, etc). I'm adding your Muesli rolls to my To-Try list. Can't wait!Hanaâhttps://www.blogger.com/profile/15660317268731033542noreply@blogger.comtag:blogger.com,1999:blog-1266479675389453667.post-83718120709995866962012-06-04T20:13:22.138-04:002012-06-04T20:13:22.138-04:00Hanaâ, I'm sure you can use your Muesli (I alw...Hanaâ, I'm sure you can use your Muesli (I always check out Aldi, when I'm in Germany, too - we don't have one in Maine), if you take the same amount, if you soak it (if possible, removing the nuts, and adding them to the final dough).<br />You will love them!Karin Andersonhttps://www.blogger.com/profile/08328101125789534921noreply@blogger.comtag:blogger.com,1999:blog-1266479675389453667.post-85723438305735838312012-06-04T14:57:16.075-04:002012-06-04T14:57:16.075-04:00Wow, what a great blog post. The color on those rolls is just gorgeous. I actually have a box of Muesli that I bought at Aldi (imported from Deutschland) and I was thinking/hoping I could use that when I initially saw your post. I'll definitely use the soaker method. Thanks :o)Hanaâhttps://www.blogger.com/profile/15660317268731033542noreply@blogger.com
