I tried porridge bread variations with about every kind of grain there is, it's a great way to get more moisture in the bread. What a great post! Thank you so much for the mention, it looks like you have had such fun playing with all these alternatives! I once tried fermenting garden plums that made an explosive and very smelly starter that then grew lots of other lifeforms, and haven't experimented that much since.
